Roasted cherry tomatoes burst with sweetness and flavor, mingling perfectly with olive oil, garlic, and fresh basil. A cozy, summery vegan dish that feels fancy but takes minimal effort. 💛

🌿 Ingredients:

  • 300g (10 oz) spaghetti or any pasta of choice
  • 2 cups cherry or grape tomatoes (mixed red & yellow look beautiful!)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • Salt & black pepper to taste
  • Handful of fresh basil, chopped
  • Optional: pinch of chili flakes or nutritional yeast for extra flavor

🔥 Instructions:

  1. Roast the tomatoes:
    Preheat oven to 400°F (200°C). Toss tomatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes until blistered and juicy.
  2. Cook the pasta:
    Meanwhile, cook spaghetti in salted water according to package instructions. Reserve about ½ cup of pasta water before draining.
  3. Combine:
    In a large pan, heat a splash of olive oil and sauté garlic for 30 seconds until fragrant. Add roasted tomatoes and cooked pasta. Toss gently, adding a little pasta water if needed for moisture.
  4. Finish with freshness:
    Stir in chopped basil and a drizzle of extra olive oil. Adjust salt and pepper.
