🌿 Ingredients:
- 300g (10 oz) spaghetti or any pasta of choice
- 2 cups cherry or grape tomatoes (mixed red & yellow look beautiful!)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- Salt & black pepper to taste
- Handful of fresh basil, chopped
- Optional: pinch of chili flakes or nutritional yeast for extra flavor
🔥 Instructions:
- Roast the tomatoes:
Preheat oven to 400°F (200°C). Toss tomatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15–20 minutes until blistered and juicy. - Cook the pasta:
Meanwhile, cook spaghetti in salted water according to package instructions. Reserve about ½ cup of pasta water before draining. - Combine:
