🍋 Vegan Lemon Mousse – Bright & Creamy

Ingredients:

  • 1 cup full-fat coconut cream (chilled)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tbsp lemon zest
  • 1/4 cup powdered sugar or maple syrup (adjust sweetness to taste)
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Prepare Coconut Cream:
    • Chill a can of full-fat coconut milk overnight.
    • Scoop out the thick coconut cream that solidifies at the top and place it in a mixing bowl.
  2. Add Lemon & Sweetener:
    • Add fresh lemon juice, lemon zest, powdered sugar (or maple syrup), and vanilla extract to the coconut cream.
  3. Whip It Up:
    • Using a hand mixer or whisk, beat the mixture until it becomes light, fluffy, and mousse-like (about 3-5 minutes).
  4. Chill & Serve:
    • Spoon the mousse into serving glasses.
    • Chill for at least 1 hour before serving to let it set.
    • Garnish with extra lemon zest or thin lemon slices.

🌿 Tips:

  • Use fresh lemon juice for the best zing.
  • Coconut cream can be substituted with whipped aquafaba for a lighter mousse.
  • Great served with fresh berries or vegan shortbread cookies.
