Ingredients

  • 4 medium potatoes, peeled & cubed
  • 1 large onion, chopped
  • 2 medium tomatoes, chopped (or 1 can diced)
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 2 tbsp tomato paste
  • 2 tbsp oil (coconut or avocado)
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • œ tsp turmeric
  • œ tsp chili powder (optional, for heat)
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Sauté aromatics
    Set Instant Pot to Sauté mode. Heat oil, then add onions, garlic, and ginger. Cook until onions soften.
  2. Spice it up
    Stir in curry powder, cumin, turmeric, and chili powder. Toast the spices for 30 seconds to bring out their flavor.
  3. Add tomatoes & paste
    Mix in chopped tomatoes and tomato paste. Cook until tomatoes break down into a thick base.
  4. Pressure cook
    Add potatoes, coconut milk, broth, salt, and garam masala. Stir well. Seal the lid and cook on High Pressure for 5 minutes.
  5. Quick release & finish
    Carefully quick release the steam. Stir, taste, and adjust seasoning.
  6. Serve & enjoy
    Garnish with fresh cilantro. Serve hot with rice, naan, or flatbread.
