Vegan Cheesy Broccoli Bites
Ingredients:
- 2 cups fresh broccoli florets, chopped finely
- 1 cup vegan shredded cheese (like Daiya or Follow Your Heart)
- 1/2 cup panko breadcrumbs (check they’re vegan)
- 1/4 cup nutritional yeast (for cheesy flavor)
- 1/4 cup ground flaxseed + 3/4 cup water (flax egg)
- 2 cloves garlic, minced (optional)
- Salt and pepper to taste
- Cooking spray or oil for baking
For the vegan dipping sauce:
- 1/2 cup vegan mayo or cashew cream
- 1 tablespoon lemon juice
- 1 teaspoon dried dill or fresh herbs
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C) and grease a mini muffin tin or use silicone molds.
- Steam or microwave broccoli until just tender. Drain and chop finely or pulse in a food processor.
- Make the flax egg by mixing ground flaxseed and water. Let sit for 5 minutes until thickened.
- In a bowl, combine broccoli, vegan cheese, breadcrumbs, nutritional yeast, garlic (if using), salt, pepper, and flax egg.
- Scoop mixture into the muffin tin and press down gently.
- Bake for 18-22 minutes until golden and firm.
- Mix dipping sauce ingredients while baking.
- Serve warm with the vegan dipping sauce.
