Vegan Broccoli Rasta Pasta

Made this today and OMG 😍 — it’s SO good!! Creamy, flavorful, and full of that classic Caribbean kick 🌶️. You won’t even miss the dairy — the sauce is rich, velvety, and hugs every bite of pasta perfectly.
🍝 Ingredients:
- 8 oz penne pasta (or your favorite pasta)
- 1 cup broccoli florets
- 1 tbsp olive oil
- ½ onion, finely chopped
- 2 garlic cloves, minced
- 1 small bell pepper, sliced
- ½ tsp jerk seasoning (adjust to taste)
- ½ cup coconut milk
- 2 tbsp nutritional yeast
- 1 tbsp lime juice
- Salt & pepper to taste
👩🍳 Directions:
- Cook pasta according to package instructions. In the last 2 minutes, add broccoli to the same pot. Drain and set aside.
- In a skillet, heat olive oil and sauté onion, garlic, and bell pepper until soft.
- Stir in jerk seasoning, coconut milk, nutritional yeast, and lime juice. Simmer for 3–5 minutes until thick and creamy.
- Toss in the pasta and broccoli, and coat evenly in the sauce.
- Adjust seasoning, serve warm, and enjoy that creamy-spicy perfection! 🤤
