💚 Ingredients:

  • 2 medium zucchinis, cut into sticks
  • 1 cup breadcrumbs (use panko or gluten-free if desired)
  • 2 tbsp nutritional yeast (for that cheesy flavor)
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • ½ cup plant milk (soy, oat, or almond)
  • 2 tbsp all-purpose flour

👩‍🍳 Directions:

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Mix plant milk and flour in a small bowl to make a light batter.
  3. In another bowl, combine breadcrumbs, nutritional yeast, and seasonings.
  4. Dip each zucchini stick into the batter, then coat with the breadcrumb mixture.
  5. Place on the baking sheet and bake for 20–25 minutes, flipping halfway through, until golden and crisp.
