🐔 Diabetic-Friendly Slow Cooker Cream Cheese Crack Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 oz light cream cheese (reduced-fat)
  • ½ cup shredded part-skim cheddar cheese
  • 2 tbsp Greek yogurt
  • ¼ cup chopped green onions
  • 2 tbsp cooked turkey bacon bits (or lean bacon, drained)
  • 1 tsp garlic powder
  • ½ tsp black pepper

Instructions:

  1. Place chicken breasts in a slow cooker.
  2. Add cream cheese, cheddar, Greek yogurt, garlic powder, and pepper.
  3. Cover and cook on low for 5–6 hours (or high for 3 hours) until chicken is tender.
  4. Shred chicken, stir everything well to mix with sauce.
  5. Top with green onions and turkey bacon before serving.
