🌱 Quinoa & Chickpea Balls Recipe (Vegan + Protein-Rich)

Ingredients:

  • 1 cup cooked chickpeas (or 1 can, drained and rinsed)
  • 1/2 cup cooked quinoa
  • 1 small carrot, grated
  • 2 tablespoons chopped parsley or cilantro
  • 2 tablespoons nutritional yeast (optional, adds cheesy flavor)
  • 1–2 tablespoons olive oil (optional, for richness)
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2–3 tablespoons chickpea flour or oat flour (as binder)

✅ Optional Add-ins:

  • Finely chopped onions
  • Lemon zest or a splash of lemon juice
  • Chili flakes for heat

Instructions:

  1. Prep chickpeas:
    If using canned, drain and rinse well. Pat dry.
  2. Mash chickpeas:
    In a large bowl or food processor, mash chickpeas until mostly smooth but still slightly chunky.
  3. Add ingredients:
    Add cooked quinoa, grated carrot, garlic, spices, parsley, and nutritional yeast. Mix well.
  4. Bind the mixture:
    Add flour 1 tablespoon at a time until the mixture holds together well when shaped into a ball. Adjust salt and seasoning to taste.
  5. Form balls:
    Scoop out about 1 tablespoon of the mixture and roll into balls.
  6. Cook options:
    • Bake: Preheat oven to 375°F (190°C). Place balls on a lined baking sheet and bake for 20–25 minutes, flipping halfway, until golden.
    • Air-fry: Air fry at 375°F (190°C) for 15 minutes, shaking once.
    • Pan-sear: Lightly oil a skillet and cook until browned on all sides.

🌯 Serving Ideas:

  • Add to wraps or grain bowls
  • Serve with tahini or vegan tzatziki sauce
  • Pair with a salad for a light meal
