Portobello Mushroom Wrap Recipe
Ingredients:
- 2 large portobello mushroom caps, cleaned and sliced
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika (optional)
- Salt and pepper to taste
- 1 small onion, chopped
- 1/2 bell pepper, chopped (yellow or green)
- 1 tomato, diced
- Lettuce leaves
- 2 large tortillas or wraps
- 1 clove garlic, minced
- Optional: vegan mayo or hummus for spreading
Instructions:
- Cook the mushrooms:
- Heat olive oil in a pan over medium heat.
- Add sliced portobello mushrooms, garlic, smoked paprika, salt, and pepper.
- Cook until mushrooms are browned and tender, about 7-10 minutes.
- Cook the veggies:
- In the same pan, sauté onions and bell peppers until soft.
- Assemble the wrap:
- Lay out tortillas and optionally spread vegan mayo or hummus.
- Add lettuce leaves, cooked mushrooms, sautéed veggies, and diced tomatoes.
- Wrap it up:
- Roll the tortilla tightly and cut in half if desired.
