Portobello Mushroom Wrap Recipe

Ingredients:

  • 2 large portobello mushroom caps, cleaned and sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 1 small onion, chopped
  • 1/2 bell pepper, chopped (yellow or green)
  • 1 tomato, diced
  • Lettuce leaves
  • 2 large tortillas or wraps
  • 1 clove garlic, minced
  • Optional: vegan mayo or hummus for spreading

Instructions:

  1. Cook the mushrooms:
    • Heat olive oil in a pan over medium heat.
    • Add sliced portobello mushrooms, garlic, smoked paprika, salt, and pepper.
    • Cook until mushrooms are browned and tender, about 7-10 minutes.
  2. Cook the veggies:
    • In the same pan, sauté onions and bell peppers until soft.
  3. Assemble the wrap:
    • Lay out tortillas and optionally spread vegan mayo or hummus.
    • Add lettuce leaves, cooked mushrooms, sautéed veggies, and diced tomatoes.
  4. Wrap it up:
    • Roll the tortilla tightly and cut in half if desired.
