  • 1 tsp baking powder
  • 1 cup (240 ml) plant milk of your choice (almond, oat, or soy)
  • 1 carrot, grated
  • 1 apple, grated
  • 9 dried apricots, rinsed with hot water and chopped
  • 4 tbsp raisins, rinsed with hot water

(Optional add-ins: Β½ tsp cinnamon, 1 tbsp chia seeds, a handful of walnuts, or a splash of vanilla extract)

πŸ‘©β€πŸ³ Instructions

  1. Preheat oven:
Set oven to 350Β°F (175Β°C). Line or grease a round cake pan.
  2. Prepare the oats:
Blend rolled oats in a blender or food processor until coarse (not too fine). Mix in the baking powder.
  3. Combine wet ingredients:
In a large bowl, mix grated carrot, apple, apricots, raisins, and milk. Let sit for 5–10 minutes to soften the oats.
  4. Mix together:
Combine wet and dry ingredients until a thick batter forms. Add cinnamon or nuts if desired.
  5. Bake:
Pour batter into the prepared pan and bake for 40–45 minutes, or until golden brown and firm in the center.
  6. Cool & serve:
Allow to cool completely before slicing. Serve plain or with a dollop of vegan yogurt!
