Oatmeal Apple & Carrot Cake (No Sugar, No Flour!)
This cake is everything you want in a healthy dessert β moist, fruity, and naturally sweet without any refined sugar or flour. Made with oats, apples, carrots, and dried fruit, itβs wholesome enough for breakfast yet satisfying as a treat!

- 2 cups (200 g) rolled oats, blended into coarse flour
- 1 tsp baking powder
- 1 cup (240 ml) plant milk of your choice (almond, oat, or soy)
- 1 carrot, grated
- 1 apple, grated
- 9 dried apricots, rinsed with hot water and chopped
- 4 tbsp raisins, rinsed with hot water
(Optional add-ins: Β½ tsp cinnamon, 1 tbsp chia seeds, a handful of walnuts, or a splash of vanilla extract)

- Preheat oven:
Set oven to 350Β°F (175Β°C). Line or grease a round cake pan. - Prepare the oats:
Blend rolled oats in a blender or food processor until coarse (not too fine). Mix in the baking powder. - Combine wet ingredients:
In a large bowl, mix grated carrot, apple, apricots, raisins, and milk. Let sit for 5β10 minutes to soften the oats. - Mix together:
Combine wet and dry ingredients until a thick batter forms. Add cinnamon or nuts if desired. - Bake:
Pour batter into the prepared pan and bake for 40β45 minutes, or until golden brown and firm in the center. - Cool & serve:
Allow to cool completely before slicing. Serve plain or with a dollop of vegan yogurt!

- You can replace apricots with dates or figs for extra sweetness.
- For a more dessert-like version, drizzle with a touch of maple syrup or top with coconut cream.
