Crispy Garlic Mushroom Bites

🍄 Crispy Garlic Mushroom Bites (Vegan)

Ingredients:

For the mushrooms:

  • 2 cups button mushrooms or cremini, halved
  • 1/2 cup plant milk (unsweetened almond, oat, or soy)
  • 2 tbsp ground flaxseed + 5 tbsp water (or use aquafaba)
  • 1 cup breadcrumbs (panko or regular)
  • 1/4 cup nutritional yeast (for a cheesy flavor, optional)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • Olive oil spray or a bit of oil for baking/air frying

Instructions:

  1. Prep flax egg:
    Mix ground flaxseed and water in a small bowl. Let sit for 5–10 mins to gel.
  2. Clean mushrooms:
    Gently wipe mushrooms with a damp towel. Slice in half if large.
  3. Set up breading station:
    • Bowl 1: Plant milk
    • Bowl 2: Flax egg
    • Bowl 3: Breadcrumbs mixed with garlic powder, onion powder, paprika, nutritional yeast, salt, and pepper
  4. Coat the mushrooms:
    • Dip each mushroom into plant milk
    • Then into the flax egg
    • Finally, coat in seasoned breadcrumbs
  5. Cook:
    • Bake: Place on a lined baking sheet. Lightly spray with oil. Bake at 400°F (200°C) for 20–25 mins, flipping halfway.
    • Air fry: Cook at 380°F (195°C) for 15 minutes, shaking halfway.
    • Deep fry: Heat oil in a pan and fry until golden (about 3–4 mins), then drain on paper towel.

🌿 Herby Vegan Dip

Ingredients:

  • 1/2 cup vegan mayo or unsweetened vegan yogurt
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tbsp finely chopped chives or parsley
  • Salt & pepper to taste

Instructions:
Mix all ingredients and chill for 10–15 mins before serving.


These make a perfect appetizer, snack, or side dish.
