- 2 tbsp coconut oil, melted
- Pinch of salt
For the chia pudding layer:
- 1 can (13.5 oz) full-fat coconut milk
- ½ cup chia seeds

- 1 tsp vanilla extract
For the topping:
- ½ cup toasted coconut flakes
- Extra lime zest
Instructions
- Prepare the crust
Blend oats, dates, coconut oil, and salt in a food processor until sticky. Press mixture firmly into the bottom of a lined 8×8 baking pan. Chill while preparing the filling. - Make the chia pudding layer
In a bowl, whisk together coconut milk, chia seeds, maple syrup, lime zest, lime juice, and vanilla. Let sit for 10 minutes, then stir again to prevent clumping. Pour over the crust and smooth the top. - Chill & set
