Vegan Cauliflower Dumplings

- 1 tbsp scallions, finely chopped
- Salt & pepper to taste
For the dumplings:
- 1 pack vegan dumpling wrappers (check ingredients to ensure egg-free)
For the sauce:
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp chili oil (or more to taste)
- 1 tsp toasted sesame seeds
- 1 tsp maple syrup
- Fresh chopped chives or green onions, for garnish

- Prepare the filling:
In a pan, heat sesame oil. Add garlic and ginger; sauté for 1 minute. Add chopped cauliflower, soy sauce, salt, and pepper. Cook for about 5 minutes until softened. Let it cool. - Assemble the dumplings:
Place a small spoonful of filling in the center of each wrapper. Moisten the edges with water and fold to seal. You can pleat them or simply press the edges tightly. - Cook:
Steam or pan-fry until golden and cooked through. For a crispy bottom, pan-fry with a splash of water and cover for 5–6 minutes. - Prepare the sauce:
Mix soy sauce, rice vinegar, chili oil, sesame seeds, and maple syrup. Drizzle over the hot dumplings. - Garnish & serve:
