When it’s chilly outside (or you just need a hug in soup form), this Vegan Creamy Broccoli Potato Soup is pure comfort. 🥰
It’s creamy without any dairy, hearty without being heavy, and filled with nourishing veggies that make you feel good from the inside out.

This soup has been one of my go-to weeknight dinners — it’s simple, budget-friendly, and ready in under 40 minutes. Plus, it tastes even better the next day!


🌿 Ingredients:

  • 2 tbsp olive oil or vegan butter
  • 1 onion, chopped
  • 2–3 garlic cloves, minced
  • 3 medium potatoes, peeled and cubed
  • 2 carrots, sliced
  • 3 cups broccoli florets
  • 3 cups vegetable broth
  • 1 cup unsweetened plant-based milk (almond, oat, or soy)
  • 2 tbsp nutritional yeast (optional for a “cheesy” flavor)
  • Salt & pepper to taste
  • A squeeze of lemon juice (for brightness)

🍳 Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until fragrant and golden.
  2. Add the potatoes and carrots, stirring for a few minutes to coat them with flavor.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15 minutes, until the veggies are tender.
  4. Add broccoli and cook for another 5–7 minutes.
  5. Stir in plant milk and nutritional yeast. Use an immersion blender to blend part of the soup (or as much as you like) until creamy but still chunky.
  6. Season with salt, pepper, and a touch of lemon juice.

🍞 Serving Ideas:

  • Garnish with a drizzle of olive oil or a sprinkle of chili flakes.
  • Serve with crusty bread or vegan grilled cheese for the ultimate comfort combo.
