Vegan Creamy Broccoli Potato Soup — Cozy Comfort in a Bowl
When it’s chilly outside (or you just need a hug in soup form), this Vegan Creamy Broccoli Potato Soup is pure comfort. 🥰
It’s creamy without any dairy, hearty without being heavy, and filled with nourishing veggies that make you feel good from the inside out.
This soup has been one of my go-to weeknight dinners — it’s simple, budget-friendly, and ready in under 40 minutes. Plus, it tastes even better the next day!
🌿 Ingredients:
- 2 tbsp olive oil or vegan butter
- 1 onion, chopped
- 2–3 garlic cloves, minced
- 3 medium potatoes, peeled and cubed
- 2 carrots, sliced
- 3 cups broccoli florets
- 3 cups vegetable broth
- 1 cup unsweetened plant-based milk (almond, oat, or soy)
- 2 tbsp nutritional yeast (optional for a “cheesy” flavor)
- Salt & pepper to taste
- A squeeze of lemon juice (for brightness)
🍳 Instructions:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until fragrant and golden.
- Add the potatoes and carrots, stirring for a few minutes to coat them with flavor.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15 minutes, until the veggies are tender.
- Add broccoli and cook for another 5–7 minutes.
- Stir in plant milk and nutritional yeast. Use an immersion blender to blend part of the soup (or as much as you like) until creamy but still chunky.
- Season with salt, pepper, and a touch of lemon juice.
