  • 1 cup couscous (or pearl couscous for texture, as pictured)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced (cremini, button, or mixed)
  • 1 small carrot, diced
  • ½ cup green peas (fresh or frozen)
  • 2 cups vegetable broth (or water)
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley
