Homemade Portobello Mushroom Sloppy Joe (Vegan)

Ingredients:

  • 2 large portobello mushrooms, finely chopped
  • 1 small onion, finely diced
  • 1 green bell pepper, finely diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce or crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce or tamari (for gluten-free)
  • 1 tbsp maple syrup or agave nectar
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • 1 tbsp olive oil or any cooking oil
  • Hamburger buns (vegan)

Instructions:

  1. Prep the mushrooms: Clean and finely chop the portobello mushrooms.
  2. Cook the vegetables: Heat the oil in a large skillet over medium heat. Add the onions and bell peppers and cook until softened, about 5 minutes.
  3. Add garlic and mushrooms: Stir in the garlic and mushrooms, cooking until the mushrooms release their moisture and start to brown, about 7-10 minutes.
  4. Add seasonings: Stir in tomato paste, tomato sauce, soy sauce, maple syrup, smoked paprika, chili powder, cumin, salt, and pepper. Mix well.
  5. Simmer: Reduce heat to low and let it simmer, stirring occasionally, until the mixture thickens and becomes saucy, about 10-15 minutes.
  6. Assemble: Spoon the mushroom sloppy joe mixture onto the hamburger buns.
  7. Serve: Serve warm with your favorite sides like fries, salad, or coleslaw.
