Vegan Cheesy Broccoli Bites

Ingredients:

  • 2 cups fresh broccoli florets, chopped finely
  • 1 cup vegan shredded cheese (like Daiya or Follow Your Heart)
  • 1/2 cup panko breadcrumbs (check they’re vegan)
  • 1/4 cup nutritional yeast (for cheesy flavor)
  • 1/4 cup ground flaxseed + 3/4 cup water (flax egg)
  • 2 cloves garlic, minced (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for baking

For the vegan dipping sauce:

  • 1/2 cup vegan mayo or cashew cream
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill or fresh herbs
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin or use silicone molds.
  2. Steam or microwave broccoli until just tender. Drain and chop finely or pulse in a food processor.
  3. Make the flax egg by mixing ground flaxseed and water. Let sit for 5 minutes until thickened.
  4. In a bowl, combine broccoli, vegan cheese, breadcrumbs, nutritional yeast, garlic (if using), salt, pepper, and flax egg.
  5. Scoop mixture into the muffin tin and press down gently.
  6. Bake for 18-22 minutes until golden and firm.
  7. Mix dipping sauce ingredients while baking.
  8. Serve warm with the vegan dipping sauce.
