🍄 Crispy Garlic Mushroom Bites (Vegan)
Ingredients:
For the mushrooms:
- 2 cups button mushrooms or cremini, halved
- 1/2 cup plant milk (unsweetened almond, oat, or soy)
- 2 tbsp ground flaxseed + 5 tbsp water (or use aquafaba)
- 1 cup breadcrumbs (panko or regular)
- 1/4 cup nutritional yeast (for a cheesy flavor, optional)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- Olive oil spray or a bit of oil for baking/air frying
Instructions:
- Prep flax egg:
Mix ground flaxseed and water in a small bowl. Let sit for 5–10 mins to gel. - Clean mushrooms:
Gently wipe mushrooms with a damp towel. Slice in half if large. - Set up breading station:
- Bowl 1: Plant milk
- Bowl 2: Flax egg
- Bowl 3: Breadcrumbs mixed with garlic powder, onion powder, paprika, nutritional yeast, salt, and pepper
- Coat the mushrooms:
- Dip each mushroom into plant milk
- Then into the flax egg
- Finally, coat in seasoned breadcrumbs
- Cook:
- Bake: Place on a lined baking sheet. Lightly spray with oil. Bake at 400°F (200°C) for 20–25 mins, flipping halfway.
- Air fry: Cook at 380°F (195°C) for 15 minutes, shaking halfway.
- Deep fry: Heat oil in a pan and fry until golden (about 3–4 mins), then drain on paper towel.
🌿 Herby Vegan Dip
Ingredients:
- 1/2 cup vegan mayo or unsweetened vegan yogurt
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tbsp finely chopped chives or parsley
- Salt & pepper to taste
Instructions:
Mix all ingredients and chill for 10–15 mins before serving.
These make a perfect appetizer, snack, or side dish.
